This is a long survival race, so commit fully to a defensive Knight with Armor, Block, and Damage Reduction and unbroken Aegis Field uptime. Cap fire resistance at 75 percent and stack chaos resistance, since Armor only covers physical hits. The Soul Stone is spent only on a win, so keep grinding the attempt until your defenses outlast him.
